Willingham Fayre Dairy Ice Cream is produced in our own built, on-farm dairy where traditional recipes are followed to create the luxury ice cream using only natural ingredients and whole milk, and flavoured with fruits and essences imported from Italy. Willingham Fayre started in March 2003 when Helen and Alan Haigh diversified the family business and since then the Ice Cream Parlour has gone from strength to strength. Currently, Helen and Alan are in the process of developing the business to offer a take-home service and plan on eventually selling ice cream through other outlets such as shops.
The Haigh family has been dairy farmers for several generations prior to moving to Lincolnshire in 1995. Ashgrove Farm is predominately an arable farm with a small herd of Limasin cattle.

There are many myths about the origins of ice cream - from stories of Alexander the Great savouring ice flavoured with honey and nectar in the second century BC - to frozen milk ices originally developed in China and supposedly sampled by Marco Polo, who introduced the craft of ice-cream making to Italy.
In Britain, there is a popular story that Charles the First, on his marriage to Princess Henrietta Maria of France, introduced ice cream to the royal court. The king enjoyed it so much that he paid his chef an annual retainer of £500 so that his court could banquet on their favourite dessert and keep ice cream a royal secret.
